Oven-baked Selecta topside with vegetables

If you want your guests to be surprised with a spectacular presentation, please, take note of this Selecta pork topside.


    • Start by preparing the seasoning for the topside. Slice the garlics very thinly and add them to the oil and the white pepper in a mortar.
    • Once the mix is ready, spread it on the whole piece and let it stand for a few minutes. Put some of the seasoning aside.
    • Preheat the oven to 180º and put the topside inside. If you use a clay casserole, the result will be perfect. Add the rest of the seasoning on the base of the casserole.
    • Once the topside is inside the oven, raise the temperature to 200º and let it bake for about 2 hours. Have a look every thirty minutes to check if it is necessary to spread more sauce on it.
    • While the topside is in the oven, boil the carrots and grill the wild asparagus and the previously sliced pepper and courgette.
    • Once the topside is ready, remove it from the oven and slice it to your liking.


For a perfect presentation, place the topside slices first on a plate. For the garnish, wrap the courgette slices with the previously chopped carrot, pepper and wild asparagus. The result: just delicious!
