Preparation Slice both the onion and the tomato very thinly. You can whether peel the tomato or not, as you wish. Afterwards, chop the coriander leaves. It is recommended to chop them just a little, since this plant has a very characteristic and strong flavour and what we just want is adding a slight flavour touch to our guacamole. Now peel the avocado. Place it in a bowl and mash it until having a homogeneous mixture. Add the lemon or lime juice, the previously sliced onion and tomato and a pinch of salt. After that, the guacamole will be ready. Put the pan on the fire to cook the fried egg and, at the same time, toast the brown bread for a crunchy touch. Presentation Place the toasts on the base of a long platter. Add the guacamole and the fried egg on top of them. This dish can be accompanied by a fruit and rocket salad, for instance. Delicious!
