Free-range Egg Muffins with Vegetables

Here is a recipe of Free-range egg muffins with vegetables, a perfect choice for a starter.

  • 6 Free-range eggs
  • 1/2 onion
  • 1 red pepper
  • Fresh spinach
  • 60 gr of grated mozzarella
  • Salt
  • Black pepper
  • Nutmeg


1.The first thing you will need is a silicone mould for muffins. Depending on the number of hollows it has, you will have to use more or less ingredients.

2.Chop or dice the vegetables (pepper and onion) to your liking. It is also advisable that you chop the spinach leaves.

3. Pre-heat the oven at 180º for 10 minutes. Meanwhile, smear the mould hollows with extra virgin olive oil.

4.Put the vegetables –chopped or diced and washed– inside each of the hollows.

5. Beat the eggs. When homogeneous, spread the mix on top of the vegetables. Add a pinch of salt and black pepper to your liking.

6.Add some mozzarella for the final touch. Lastly, put the tray inside the oven for 15-20 minutes until the vegetable muffins seem crunchy.


Remove the muffins carefully and place them on a wooden board, while sprinkling some nutmeg on top of them.
