Toasted bread with spinach and fried free-range egg

  • 300 gr of spinach
  • 2 bread slices
  • 2 garlic cloves
  • 1 soup spoon of vinegar
  • 2 Coren's free range eggs
  • Olive oil
  • Salt


1.Pour some water into a pot and whenever it is boiling, add salt and the spinach. Once boiled, make sure they release all the water when strained.

2.Pour an oil jet onto a pan and, once hot, fry the bread on both sides.

3.Once the bread is removed, add the garlic cloves to the same pan and after a couple of turns, add the spinach for two minutes.

4.At the same time, fry two eggs until your liking in another pan with plenty of oil.


Finally, if you are looking for a decent plating, place the slice of bread in the bottom of the plate with the bed of spinach on it and the fried egg as the final touch.
